Mizuna Citrus Crunch Salad

Peppery mizuna and mustard microgreens against sweet orange and grapefruit, with a honey-mustard dressing — a restaurant-grade salad in 15 minutes.

Ingredients

  • 2 cups mizuna or mustard microgreens
  • 1 orange and 1/2 grapefruit, segmented
  • 1/4 small red onion, shaved thin
  • 2 tbsp toasted walnuts or pumpkin seeds
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon or kasundi mustard
  • Lemon juice, salt and pepper

Method

    Whisk olive oil, honey, mustard, a spoon of lemon juice, salt and pepper into a dressing.

    Segment the citrus over a bowl to catch the juice — add a spoon of it to the dressing.

    Lay the microgreens on a wide plate, top with citrus segments, onion and nuts.

    Drizzle the dressing just before serving and finish with extra microgreens on top.

Chef's tip

Mustard microgreens have a real wasabi-like punch — start with a small handful if you're new to them.
